Oklahoma City Thunder: Sticky Toffee Pudding

Sticky Toffee Pudding

Who better to identify a recipe that represents Oklahoma City than the man who feeds thousands of residents yearly? The Thunder collaborated with Levy Chef Andrew Murin at Paycom Center to submit a recipe on behalf of OKC. Chef Andrew was quick to recommend a fan-favorite dessert: Sticky Toffee Pudding. Not only has the Sticky Toffee Pudding become one of the Paycom Center’s most popular items, this now signature dessert was featured in Paycom’s 20th Anniversary Cookbook so fans can replicate it at home.


Ingredients

THE BATTER
1 Cup pitted dates, chopped
1 Tsp baking soda
1 1/4 Cup water
1/2 Stick Unsalted butter, cubed
2 Large eggs, lightly beaten
1 Cup Dark Brown Sugar
1 3/4 Cup self-rising flour
1 Tbsp pure vanilla extract
TOFFEE SAUCE
4 Tbsp + 1 Tsp unsalted butter
1 Vanilla bean
1 Cup heavy cream
1 Cup brown sugar

Directions

  1. Preheat oven to 350
  2. In a saucepan, combine baking soda and water, bring to a boil. 
  3. Pour over chopped dates and allow to cool
  4. Using electric mixer, cream butter on low for 2-3 mins. Add brown sugar and mix until fluffy
  5. Add eggs gradually, mixing on medium
  6. Turn to low and add flour
  7. Remove bowl from mixer and stir in date mix and vanilla extract
  8. Pour mix into lightly buttered springform pan; bake for 30-35 mins until spongy and slightly firm to the touch. Set aside.

TOFFEE SAUCE:

  1. Melt butter over low heat in small pan
  2. Split vanilla bean and scrape pulp and seed, then add pod to butter
  3. Stir in cream and brown sugar, bring to boil
  4. Turn heat down to simmer until thickened; remove vanilla bean
  5. Remove cake from pan and place on platter. Pour toffee sauce over moist cake.

Serve warm with ice cream or alone
